Recipe: Christmas Morning Breakfast Omelet

This is one of our family traditions, going back one generation. It is not Christmas morning without this omelet in the oven! I will make it the night before and put it in the fridge, so on Christmas morning I just pop it in the oven. Easy and delicious.

Breakfast Omelet
18 eggs
1 c. milk
1 c. sour cream
1 tsp salt
1/4 c. chopped green onions
2 c. grated cheese
2 c. cubed ham
(add in any topping you want…bacon, corn, etc)

Preheat oven to 350 degrees. Beat the eggs, milk, sour cream, and salt in a bowl. Add in onions, cheese and ham. Stir together, and pour into a greased 9×13 pan Bake until set, about 45 minutes. Cool at least 5 minutes. Cut into squares, and serve hot.
