Do you occasionally have leftover mashed potatoes? Yeah, we never do at my house. But I like this recipe enough to make up a batch of potatoes just for this recipe!

Ingredients:

2 C Mashed Potatoes
1/4 C Flour
2 Eggs
salt & pepper to taste

2 T butter or oil
chopped onion & minced garlic to taste

Cook onion and garlic in butter/oil until onion is clear. Combine with remaining ingredients. Cook on waffle iron for 3-5 minutes or until golden brown. Delicious!!
