DIY Frozen Homemade Rolls!

I LOVE a good homemade roll! Sometimes it’s not so bad having to make them but more times than not I find myself out of time or just not willing to put forth the effort to make rolls from scratch. That usually leads me to the famous Rhodes frozen dough rolls. Which I love but with the inflation I’m taking a step back and trying to save pennies where I can which lead to me creating my own make ahead freezer rolls!

Guys, I’m sold and don’t know why I haven’t done this sooner! They’re just like the frozen rolls you’d find in the freezer section at your local grocery store. Already rolled and in individual servings making it easy to just bake up the amount you want. Best part is, they taste like home made rolls, yum! There’s nothing like a homemade roll slathered with butter (or my favorite, honey butter) to go with your dinner. This recipe was perfect timing with the Christmas holiday here. We were assigned to bring rolls but I just know I’m not going to want to be in the kitchen all day. So I whipped up a batch of these make ahead freezer rolls that are just waiting in the freezer for Saturday.

You can do basic with your rolls and top them off with butter or get fancy. Add some rosemary, grated parmesan, or any other garnish you can think of! You just can’t go wrong with these homemade freezer rolls!

Make Ahead Freezer Rolls

2 cups milk
2 Tbsp Yeast
1/4 cup sugar
6-6 1/2 cups flour
2 tsp salt
1/2 cup butter, softened
2 eggs

Begin by heating up your milk until it reaches between 105-110 degrees. (You can do this in the microwave but I prefer on the stove top) Whisk in the yeast and sugar and let sit for 5 minutes. Meanwhile combine 5 cups of flour and salt in a mixer. Cut the butter into small cubs and slowly add to the mixer while on low speed. Set asked. Whisk the eggs into the milk and yeast mixture. Once combined, pour mixture into the flour mixture on low. Gradually add remaining flour if needed until dough forms. Cover the dough and let rise for 1 hour or until doubled in size.

Punch down down to deflate. Divide your down into 3 equal sections (this is easiest to do with a food scale). Each section should make 12 rolls depending on desired size. Place each roll on parchment lined cookie sheet and freeze for 2-3 hours. Remove rolls from cookie sheet and place in ziplock bag for up to 1 month.

To bake: Place frozen rolls about 1-inch apart on lightly greased baking dish. Let rise for about 4 hours or until doubled in size. Preheat oven to 375 degrees, bake for 15-18 minutes or until golden brown. Brush top with melted butter and serve.

Christmas Movie List You Don’t Want to Miss!

Guys! My kids get the whole next week off before Christmas! No better time to bring all the Christmas spirit into our home than with some Christmas movies! We’re making it a marathon and hoping to check off as many as we can before Christmas Eve! We might even throw in some hot chocolate and popcorn as well.

You guys, food is EXPENSIVE. Like seriously expensive. I don’t know if it’s because I now have a teenage boy in wrestling, or because my 5 year old recently started eating more, or if I am just really starting to pay more attention, but I spend a lot of money on groceries each week. What to Keep on Hand In Case You Have to Stay Home and Quarantine

 

Whether you get sick, get exposed or you are needing to quarantine for your job or your travels, you need to make sure you are prepared to stay home for a 2 week stretch. The reality is this, until this last year, many of us were not at all prepared for having to stay home for that long of a period of time. We are a go go go society.

Any Meds

Make sure you keep any and all prescription medicines filled up and as soon as you can. Preferably get 90 day supplies so you know you have plenty on hand. 

Water

I know you have a faucet at home, but it’s always a good idea to have water stored up and ready in case of an emergency. The general rule is 1 gallon of water per day, per person. 

Things to Do

Grab some games, buy a few new books, find some great movies, because being home for 2 weeks can often lead to boredom. What will you be doing while you are home?

Set goals

Having goals and writing them down is one of the easiest ways to actually accomplish what you are working toward. If you don’t have a concrete goal of how much you want to drink, it’s hard to focus on drinking enough if you aren’t reaching for a specific amount.

This may seem silly, but IT WORKS! Having a great, reusable water bottle, preferably one that keeps your water cold will be a huge benefit toward reaching your water intake goals. 

Get a Good Water Filter

Whether you get a filter pitcher, filter bottle or a filter that attaches to your faucet, just grab a filter. Honestly, we are lucky in that most of the water in the United States is safe to drink, but the filters often take the chlorine flavor away from it, which for me is preferable. 

Get an Ice Maker

I don’t know about you, but for me to drink lots of water it needs to be ice cold. About a year ago we paid $99 for a countertop ice maker and I have noticed I always drink water now. I love drinking on ice cold water and the ice maker helped a lot!

How to Make Sock Gnomes- Easy DIY Instructions

Shopping around boutiques and stores lately, I’ve seen these Gnomes everywhere! If you love to craft then this would be a good one to make. I’m actually making these with some girls in my neighborhood. They are super easy to make. You could even switch out the hats for different holidays. Check this out!

How to Make Sock Gnomes

Supplies:

  • 1 Patterned Crew Sock adult size
  • 1 Solid Color Crew Sock adult size
  • 1 9 inch Foam Cone
  • 1 4 x 4 inch Piece of Faux Fur
  • 1 1.25 inch Wood Bead
  • Hot Glue Gun
  • Holiday Decorations (buttons, felt piece, etc.) optional

Instructions:

  1. Cut off the bottom (toe part) of a solid colored sock, just past the heel (as shown below). Pull the sock over the bottom of the cone and pull it up so it covers the lower 5 inches of the cone. Use hot glue to secure the top of the sock to the cone.
  2. Cut out a beard from fur. It’s easiest to draw the beard shape on the back of the fur. Cut the beard about 3.25 inches tall and 2.75 inches wide. When cutting fur, you DO NOT want to just use scissors and cut it out like you would any other fabric because then the fur along the edges of the beard will be very short. To make sure you get the long “beard” effect on the fur, you have two options. First, you can use a razor blade or exacto knife and cut from the back of the fur, cutting through the backing only. Second, you can use sharp scissors, but you’ll want to cut with the back of the fur facing you, and slide the bottom of your scissor through the fur very close to the backing. Your goal is to just cut the backing, not any of the fur itself. Place the beard on the sock at the 4.5 inch mark, or halfway up the cone. Hot glue the beard to the sock.
  3. Hot glue a bead onto the beard as shown below. Note that the bead is only touching beard, not sock.
  4. Make the hat. Turn the patterned sock inside out. If sewing, pin a diagonal line as you see below, then sew along it and trim about 1/2 an inch away from the line you sewed. I used a serger here, but a regular sewing machine works just fine. Just set the stitch length a bit longer than normal and try not to stretch the sock as you sew. Alternately, if you don’t want to sew, you can mark a diagonal line as you see in the photo. Cut about 1/2 an inch to the right of it. Glue the right sides of the sock together along the cut line.
  5. Turn the sock right side out, then place it over top of the cone as a hat. The sock will stick to the cone as you place it on, so it will take a minute to pull it on. Watch the video to see the easiest way to do this. Decorate the hat with holiday shaped buttons, felt pieces, jingle bells, etc., if desired.

Does it seem like your kitchen is always messy? I know mine does. I swear I can clean it to the degree that it is absolutely spotless and perfect and within an hour, it can be a complete disaster. It can get pretty overwhelming.  This is especially true during the busy season when my big kids are in sports non stop and I constantly have visitors stopping over (like during the holiday season).

Maybe I’m the lone one out here, but I had no idea that there were people that didn’t keep trash cans in their kitchen. It’s important to have a place for your trash to go as soon as you accumulate it.

If at all possible, keep your cooking utensils stored in a drawer rather than on the countertop. Storing them on the countertop, even if in containers, clutters the area greatly.

Same thing goes with kitchen appliances. Create a storage spot for them, some place that is hidden from sight. This is another thing that creates a cluttered look in your kitchen. 

Wipe Counters and Stove After Each Meal

Every time you prep a meal, wipe down the countertops and your stovetop. It’s very easy for these spaces to get dirty quick and I don’t know about you, but I want my kitchen clean!

If you are anything like me, you love to give gifts, but you don’t necessarily want to add to someone’s stressful life of clutter. Maybe I should preface this post by saying that I have reached a point in my life that I absolutely hate clutter. I am ready to simplify life a lot, so I guess I just assume that most people want the same thing. 

That’s why this year I am either giving food gifts or experience gifts this year. Food gifts for those that I know prefer to stay home, but experience gifts for those friends and loved ones that love to get out there and do something! When it comes to my kids, they have more toys than they can ever use and more than they could possibly need. Plus, I know that many family members will give them even more.
