Breakfast. Yum. I love breakfast, but I’ve noticed that a lot of options have a TON of sugar in them.  Look at all of the cereal boxes or even frozen pre made breakfasts. There is a lot of sugar! The trick to eating a healthier breakfast is to have a sugar free base and then add healthier options on top. For example, you could make a sugar free waffle, pancake or crepe recipe and then add in fruits, cinnamon and greek yogurt instead of syrups and sugars. Have you ever had waffles or crepes with yogurt instead of syrup? It’s so good! Start YOUR day out right with these Sugar-Free Breakfast Ideas:

Granola & Greek Yogurt
Add in- Strawberries, Blueberries, Blackberries, Raspberries, Banana, Kiwi, or any other yummy fruit that are in season. Grab a yummy granola to top it off. My kids eat this for a mid morning snack too.

Waffles
Ingredients:
1 3/4 C Flour
3 tsp Baking Powder
1/2 tsp Salt
2 Beaten Egg Yolks
1 3/4 C Milk
1/2 C Oil
2 Stiffly Beaten Egg Whites
Directions:
Sift together dry ingredients. Combine yolks, milk and oil. Stir into dry ingredients. Fold in whites, leaving a few fluffs. Bake. Makes about (4) 10 inch waffles.

Crepes
1 Cup Flour
1 1/2 C Milk
2 Eggs
1 Tbsp Oil
Directions:
In Bowl combine all ingredients and beat until smooth. Lightly grease a 6-Inch Skillet or Crepe Pan. Heat up the pan and remove pan from heat. Spoon on 2 Tbsp batter and heat evenly. Makes about 16 small crepes.

Pancakes
1 Egg
3 Tbsp Oil
1 1/2 C Flour
4 1/2 tsp Baking Powder
3/4 tsp Salt
Milk enough to make for medium thickness
Directions:
Beat all together until well combined. Heat in greased pan until golden brown.

Egg Burritos/ Egg Omelette
Tortillas (optional)
Eggs
Cheese
Bell Peppers
Onions
Directions:
Beat eggs and add in peppers and onions. You can either make it into an omelette or scramble together for burritos.

4 Tasty Fudge Pops To Cool Down With This Summer!

The temperature is heating up and my kids have been begging for popsicles. I’m not a huge fan of popsicles but rather, fudgesicles! We love to enjoy the store bought ones but the money saver in me came out and I found some yummy homemade fudgesicles that cost a fraction of what you would pay in the store. Here’s 4 different ones I’m sure you’re families are going to love!

Homemade Fudgesicles
3 cups milk
1 cup cream
1 1/4 cups sugar
pinch of salt
2 Tbsp unsweetened cocoa
2 Tbsp cornstarch

Mix ingredients over the stove (leave out the cornstarch) until it just starts to bubble. Add cornstarch and stir until all is dissolved. Fill your popsicle container and freeze.

Vanilla Ice Cream

Start with ice cold rootbeer (you can place it in the freezer for a short time or make sure it’s been in the fridge overnight). Then simply layer inside your popsicle mold, ice cream and rootbeer. Put them in the freezer overnight.

These homemade fudgsicles are SO EASY to make using Jello chocolate pudding. And they taste sooooo good! They're perfectly fudgey and delightfully refreshing for a hot summer day! This is such a fun summer recipe and a great recipe for kids!

Quick & Easy Fudgesicle
1 box Instant Jello Chocolate Pudding (4 servings)
2-2/3 cups milk

This is a simple recipe and whips together quick. Just combine both ingredients and fill in your popsicle mold. (Note: this is more milk than the box calls for but will help you pour into your molds easily). You can use this same recipe for other flavors as well!

Strawberries and Cream Popsicles
4 cups strawberries
3 Tbsp water
3 Tbsp sugar (or honey)
1/2 cup whipping cream
1/2 tsp vanilla extract

Combine your strawberries, water and sugar in a sauce pan and simmer for about 5 minutes until strawberries become soft. Let cool, then puree. Whip the cream and vanilla together for 2 minutes to make soft. Fold in your strawberries and pour into your molds.

Have you been doing a lot of laundry these days? I don’t understand why, but it seems like I am doing laundry double time these days. Maybe it’s because we are working outside so much or maybe it is because we are exercising more than ever, but I really didn’t expect to be so busy doing laundry with 4 out of the 5 of us rarely leave the house!

I’ve decided that with all of my time at home, I am going to put some effort into changing my habits and turning myself into more of a minimalist. Less stuff, less worry and less time spent on doing the same things over and over. I have learned how to significantly save time on laundry with these tips.

Sort First

One of the easiest ways that you can save time on laundry is by sorting it before you wash it. Ideally, you would have a sorting system for when clothes go into the laundry. If it is pre-sorted, it makes it so much easier to just grab them and toss them in the washer on laundry day. 

Additionally, while you do need to sort clothes by color to some degree, it is also a good idea to sort your laundry by weight. If you have a large amount of clothing that is lightweight, you can fit more into your machine. 

Wash Jeans Less Often

If you didn’t know it yet, you really shouldn’t wash jeans too often. Washing them too often can wear out the denim. Ideally, you should wash your jeans after every 3 wears. 

Put it on the Schedule

To make your laundry duties a little easier, put it on your schedule. If you have it worked into your schedule and you follow said schedule, you are less likely to end up with a backload of laundry. It’s much easier to do laundry when you have just a couple of loads, rather than a room full.

Road Trip Tips To Help Keep Your Sanity!

Summer is here! Although we’ve had to change many of our original family travel plans we’re still packing up the kids and headed out on some adventures. We’ll be stopping at some hiking trails, camping, and going to the lake. For many of those destinations, we have to travel anywhere from an hour on up to 6 hours so we’re gearing up and making sure we’re ready with these tips and tricks we’ve learned through the years.  For the best rentals check out party bus rentals in Corpus Christi!

Make a Car Sickness Kit – it was years before we realized our middle child would get car sick. It wasn’t until she was 3 and throwing up when we’d go through the canyon we realized what was going on. So here’s what goes in ours; fabreze, lysol wipes pack, mints, motion sick bracelets and gallon zip lock bags (great for catching throw up and closing off the smells!).

Plan to take Rest Stops – this was difficult for me. We grew up driving from Utah to Oregon (13hrs) with really only one stop mid way. If you needed to use the bathroom it was while the car was fueling up. But with little ones we’ve realized they do so much better if we take 10 minutes, get out of the car and run around at either a park or field.

Bring Healthy Snacks – this goes along with getting car sick. When you’re in the car for that long, stationary, your body won’t digest those sweet treats very well. So pack some lighter, healthier snack options for you and the kids. And, stick to water.

Find some Audiobooks to listen too – this will allow the kids to keep their eyes on the road (especially if they get car sick) and their surroundings. There are some fun kids podcasts you could checkout if you’ll have service, or check with your local library for some books on “tape” to listen too.

Get Crafty with your Supplies – while having electronics is nice, we like to keep them away for as long as possible. So we get crafty, without the mess of coarse. We’ll bring pipe cleaners, stickers, wikki stix, paper, colored pencils (we don’t do crayons because if they get lost in the car and melt, they can be a mess to clean up) and other simple mess free items.

Don’t Forget the Games – while it can be difficult to play board games you can easily play some road trip games that require no supplies. Like name that tune or movie, quiz time (great for keeping up on their school subjects), license plate game (see if you can find all the states), the alphabet game and more! If that’s not your style, try getting a few road trip games before you leave.

Be Flexible – is my last tip. Road trips can be lots of fun but don’t make them too stressful. Everyone will have a better time if you allow for a little bit of flexibility. Take an extra stop somewhere, pull the phone out and take funny pics. Find ways you can lighten the mood and make this memorable time enjoyable for everyone!

7 Fun Summer Activities While Social Distancing

Most states are still in the social distancing stage. So what we we going to do this summer? Even though we can’t be in crowds, there is plenty to keep us busy. Here are 7 fun summer activities you can do and stay away from crowds.

  1. Visit your state Capitol and have a picnic. Most kids have never visited their state Capitol. This summer introduce it to your kids. Call ahead and most Capitols have free tours as well (if yours is open). Pack a lunch and have a picnic on the grounds.
  2. Service. I always find ways to serve during the summer. This way the kids aren’t focused just on themselves. Look around your community and find a way to help others. You could help out your own family like grandpa and grandma.
  3. Be a tourist in your city. When we travel to new cities we love doing these scavenger hunts. Why not get one for your own city? You’ll learn new things that the kids will remember every time they walk down that city street, or see that special building. The best part? You are just walking around and learning, not going into any buildings! If you don’t want to buy a scavenger hunt, you can always check Trip Advisor for your city and hit the hot spots.
  4. Movie nights outside. Since most of our movie theatres are closed, how about you have your own movie night outside. If you don’t have a screen projector, then set out a laptop or iPad and play a movie on your deck! Grab pillows and blanket and enjoy a show under the stars.
  5. Family campfires. This is one of our favorite things to do during the summer. We have a park close by that has fire pits that we can use.   7. Bike on a new trail. There are so many fun bike trails around me and now we have had the time to try them out. Check for some near you. You can find fun dirt, mountain and paved trails.

Tomatoes 

Okay, so here’s the thing. I know that some people think that growing tomatoes is super easy, and some think it is just the opposite. I happen to fall into the latter. I have tried to grow tomatoes 3 different times and this year is the FIRST TIME EVER that I have seen any success. Of course, we aren’t far enough into the season to actually harvest, but my plants are growing enthusiastically and there are lots of blooms already. 

I simply read some tips and chatted with people that I know that have seen success. I think as long as you follow a few simple tips, it can be easy.

Spinach

Spinach is very similar to lettuce. It grows easily and quickly. 

Green Beans

Green beans provide an abundant harvest and a quick growing time. Green beans also tend to be a kid-favorite garden vegetable. So, if you are gardening with your kiddos, this one is a great choice!

Spring is upon us and for many of us, we are spending all of our time safe at home. So, what are you going to do with all of your time? Have you given much thought to gardening? I have recently started working on my garden this year and I am having such a wonderful time! I’ve had gardens before, but I still consider myself a newbie at gardening. I have found though that there are some veggies that are easier than others to grow.

If you are doing your gardening with kids, this is a great one to keep them interested. 

Radishes

Radishes are very popular vegetables for newbie gardeners to grow because they are so fast! Literally. They can go from sprout to full harvest in just 20 days. That is FAST!!!

Zucchini and Summer Squash

Zucchini is my absolute favorite vegetable to grow. They do need warmth and lots of moisture. The great thing about this is that you can even be a procrastinator since later in the season is the best time to grow them. Once the squash starts to grow, it grows fast. 

We love zucchini in our family and I have made so many delicious recipes with it!
