One of our favorite “freezer meals” is just a batch or two of muffins. Muffins freeze GREAT and it is almost as simple to make a large batch as a small batch. You will want to freeze them AFTER you bake them. One of our favorite muffins is this breakfast muffin – great to grab and go or for the kids to grab in the morning during the Summer! Feel free to double or quadruple to stock up!

Delicious Breakfast Muffins

Preheat oven 400*

Combine:

3.5 C flour
2 T baking powder
2 t salt
2 T sugar
Meat of your choice – bacon or sausage (I use about 1/2 C – 1 C of real bacon bits to save time!)
1 C shredded cheese of choice (I like sharp cheddar!)
Parsley to taste

Combine in smaller bowl:

2 Eggs
1.5 C milk
2/3 C canola oil
.
Make a well in the dry ingredients and add the wet ingredients. Stir until just moist (will be lumpy as usual with muffins). Bake at 400* for 20-25 minutes. Remove to rack to cool. Makes 24 muffins.
