One thing I love is a good chimichanga!! However, I am currently eating healthy and losing weight (hooray!). With today being Cinco de Mayo I wondered if there was a healthy alternative to the deep fried chimichanga and, of course, there is! Just spray your pan with cooking spray, make your burritos (I use whole wheat tortillas and fill with whatever’s on hand – black beans & rice, refried beans & a little cheese, green chili meat) and put them in the prepared pan (seam side down). Spray the burritos with a little more cooking spray and bake 20 minutes at 400ยบ. Easy peasy beans & cheesy!
