Do you let fruit sit out on your counter until it goes bad and then just throw it away? I have found a use for almost every overripe fruit out there, but avocados have still gone to the garbage can at times. Recently I found out that you can freeze them and… how did I not know that before??? Now when they’re on sale, I can stock up. My husband loves guacamole or just spreading the avocado onto a sandwich.

To freeze avocados, simply pit them, seal them and freeze them! If you want them to last longer you can put them in a blender with a little lemon or lime (preferred) juice (about 2 teaspoons/avocado) and blend to puree. Then you can just scoop the puree onto a cookie sheet and flash freeze. Seal the frozen scoops in freezer bags and just take out the amount you want each time you’re in the mood for avocado goodness.
